Before imported rice became a staple in West Africa, #fonio had been grown and eaten in the region for more than 5,000 years. This nutritious and drought-resistant cereal is so rich in cultural significance that ancient Egyptians chose fonio as one of the grains they took in their tombs to the afterlife.

Pierre Thiam, the Senegalese #entrepreneur and New York celebrity chef, is on a mission to bring back fonio. He is starting with the US market, and it's a move that makes a lot of sense. It's the same playbook that launched quinoa - another super grain - into the global limelight. And once fonio goes mainstream, African farmers will have the incentive to cultivate more fonio.

Gluten-free, easy to digest, and with a low glycemic index, fonio contains amino acids methionine and cysteine, which support tissue growth and are deficient in most other grains. 

Pierre has successfully secured national distribution with Whole Foods in the US (owned by Amazon) and fonio is now on trend-setting menus across New York City in restaurants like Dimes, Forager's Table, and several others.
